Homemade spinach falafels and homous

BBQ brown rice salad, CHAR GRILLED spring onion and lemony leaves

 

Serves 2 with leftovers

Ingredients;

Falafels

4 handfuls of spinach

1 can chickpeas drained

1 tsp cumin

4 tbsp brown rice flour

3 cloves garlic

METHOD

  • Put the brown rice on to boil with some vegetable stock
  • Meanwhile combine all the falafel ingredients (apart from flour) in a food processor, blend to combine, then add the flour and blend again.
  • Meanwhile chopped all the ingredients for the BBQ salad and combine all the salad dressing in a jar and give it a good shake
  • Put a pan on heat with the heat a frying pan with oil and shape the falafel into little discs and place in the pan
  • Keep an eye on the falafel but also clean out your food processor and add all the houmous ingredients. Then blend for a minute or so until to the required consistency. Add more water if you need.
  • Once cooked drain the rice and leave to cool
  • Meanwhile plate up your falafel and homous and then put the pan back on the heat and place the spring onions in the dry pan, turning over when charred.
  • Combine all the BBQ salad ingredients with the dressing and spoon on to your plate
  • Chuck a handful of leaves on your plate with a few drops of oi#live oil and a squeeze of lemon and top with your char grilled spring onion

Homous

1 can chickpeas drained

1 garlic clove

1 heaped tbsp tahini

A glug of water

Pinch of salad and pepper

BBQ salad

Half cup brown rice

1 red pepper

half can corn

1 spring onion

BBQ salad dressing

1 tbsp tomato paste

Squeeze of lemon juice

Drizzle of olive oil

Apple cider vinegar

Sprinkle of;

Cayenne pepper

Cumin

Garlic powder

Paprika

Pinch of salad and pepper

To serve

2 Spring onions

2 handfuls leaves

Drizzle of olive oil

Squeeze of lemon juice

Pinch of salad and pepper
