Healthy hunger bites


1 x cup mixed dried fruit (I used dates, cranberries, raisins, and apricots)

1/2 x cup mixed seeds (I used pumpkin, sesame and chia seeds)

A large handful of Brazil nuts

A large handful of cashew nuts

2 tbsp coconut oil

1/2 cup oats

1 cup quinoa

3 tbsp nut butter (I used almond and peanut butter)

Flour to dust (I used sprouted spelt flour)



Vanilla extract



1. Preheat your oven to 200 C, gas mark 6

2. Cook the quinoa according to packet instructions, drain and put into a food processor

3. Put all the ingredients into a food processor and pulse until combined

4. Empty the dough onto a floured surface and press out with your hands until it is the thickness of a coin ( be careful, the Dough is a little fragile)

5. Use a cutter to cut circular biscuits, place on a baking tray and sprinkle with a tiny pinch of salt

6. Bake for 20 mins until golden 

Enjoy with a cup of tea as a super healthy pick me up, or wrap a couple up and keep in your bag for times of need.
