Baked sweet potato with smashed Avocado on Purple Kale

 

1. Bung a sweet potato in microwave for 7 mins on high until soft, rub with a little oil and put in the oven on high to crisp up
2. Squeeze half an avo into a bowl with salt, pepper, lime juice and a little chilli and squash with a fork
3. Steam kale in a pot with boiling water for 5 mins, drain and season with a tiny pinch of salt and pepper
